New head chef at Hudson Public House

Even though the Hudson New American Public House is less than a year old, it already has undergone a rebirth after chef Nicole Burrows took over the kitchen of not only the Maple Leaf pub, but also at owner Seth Howard’s first neighborhood pub, the Collins Pub located downtown.

Although sweeping changes aren’t on the menu, Burrows, who was trained at the health-oriented Natural Gourmet Culinary School in New York, says she has a preference for seasonal and local foods that likely will be reflected in the rotating menu. She also updated the brunch menu shortly after she took over head chef duties from Erik Wood in November.

“It’s an asset in the neighborhood to have someplace where you can have brunch,” Burrows said, noting that at the time, the addition of brunch was still new to the pub.

For those of you with food allergies, you can rest assured that a bit more care and attention will be paid to your requests because of Burrows’ education at a school that focuses on whole, fresh and unprocessed foods. Vegetarians also might get a few tasty delights, as Burrows previously worked at Greenwood vegetarian restaurant Carmelita.

And don’t expect Burrows to be hanging up her chef’s hat in favor of the iron fist of a reality show-type head chef.

“I love working on the line,” she says. “I don’t think that I could not do it.”
